Avelina, a New American Restaurant by esteemed Executive Chef John Broening and Pastry Chef Yasmin Lozada-Hissom, is opening in Lower Downtown Denver this summer 2016!
Avelina will serve seasonal, rustic, wood-fired New American dishes along with local crafted beer, an eclectic wine list from all over the world and innovative cocktails that will be a mix of modern with classic favorites.
Award-winning husband and wife team, Executive Chef John Broening and Pastry Chef Yasmin Lozada-Hissom, will work together once again, bringing their culinary mastery to the restaurant. Broening will be at the helm of the kitchen and Lozada-Hissom will oversee the dessert menu. Karen Pence will run the front of the house operations ensuring a well-educated, professional, yet down to earth service staff. Aubrey Baker will be the sommelier on staff and will create an engaging cocktail, beer and wine list.
“Nothing gives me more satisfaction that our guests leave happy because of the delicious food they ate and the great service they received from the staff,” said Broening. “The menu at Avelina will be rustic and seasonal, which is the way I love to cook and it’s the way I grew up eating.” Browning is known for having a culinary approach distinctly focused on seasonality and ingredients and for his passion on forging relationships with farms and local providers.
The restaurant’s menu will feature foods such as Squash Blossoms filled with Sheep’s Milk Ricotta, Charred Corn and Tomato Essence, Wood-Fired Brick Chicken with Flageolet Beans, Chorizo, Spicy Greens and Pastis Jus and the desserts will include a Gianduja Ice Cream Seven Layer Bar, Hazelnut Dacquoise, Honeycomb Crunch and Guanabana Meringue cake with Creme Fraiche and Dulce de Leche Ice Cream.
Avelina will be operated in partnership with Stacey & Kevin Jennings of Urban Food Group, a multi concept, multi unit restaurant ownership company.

Our vision is for the restaurant to be approachable and comfortable. We want the restaurant to be a place where guests can go for a celebratory meal, a business meeting, or for no special reason at all. Our guests will feel comfortable and attended to no matter the day of the week or the occasion.”
Initially, the restaurant will be open for dinner hours only and will open for lunch and brunch in the coming months. Opening hours: Sunday 5pm to 9pm, Monday through Thursday 5pm to 10pm and Friday & Saturday 5pm to 11pm.
