Comida started off as a pink food truck and was so successful, that it spawned two cantinas, one in The Source, and the other in Longmont. Kachina Southwestern Grill is operated by Sage Restaurant Group, a locally owned hospitality company located in Denver. Kachina Southwestern Grill, helmed by Executive Chef Jeff Bolton, works with local farms, ranches and dairies to source fresh and local products.

Their signature dish is the Navajo Tacos, which are served on a light and fluffy fry bread, and come in a variety of unique flavors, such as the Mojave with duck confit, pickled cactus, chipotle agave, and manchego cheese, and the Maricopa with shrimp a la plancha, green chile aioli, peach habanero salsa, and brussels sprouts slaw.

Los Chingones, is helmed by Chef Troy Guard, and is part of the TAG Restaurant Group. Los Chingones is a modern take on Mexican food with a tapas-style twist.

Their signature tacos include the Chicken Leg, made with chingon slaw, guajillo ranch, and crumbled fuego takis; the Lamb Neck, made with onion, cilantro, and chile pasilla, as well as a Fried Tofu, made with peppers, onions, confit shallots, carrot salsa, watercress, and cotija.

Los Tacos Famous Taqueria is a family-owned and operated eatery that serves authentic and flavorful Mexican cuisine.

Their signature taco is named, the “Famous” Taco, and it’s title is well-deserved. It is made with two warm fresh grilled corn tortillas, melted cheese, tender whole pinto beans, your choice of freshly prepared fillings such as Carne Asada, Pollo, Carnitas, Chorizo, Pescado, Lengua, or Diablo Shrimp. The taco is then topped off with in-house Pico, and if you order the “loaded” option, they add sour cream and freshly mashed avocado.
