As a working mother of two girls, I rarely get time to sit down for lunch. Most of time, I seek something fast and easy and I am the first one to admit that sometimes my choices aren’t the healthiest.
As my kids get older, their hypocrisy radar is always on, ready to spot rules that apply to them and not to parents (especially as it relates to things like soda consumption). Under this newly fined tuned microscope, I am forced to step up my game and make better rules for myself as well as for them.
Since being introduced to GoBistro, I don’t have to work as hard to maintain those rules…
GoBistro was founded by Colleen Callaway Eager & Mike Keuler. Colleen spent over a decade as a marketing and communications executive, and after his career as an Olympian and coach, Mike completed his culinary training at Johnson & Wales and worked under Chef Lachlan at Frasca Food & Wine in Boulder. Previously, both worked for Whole Foods Market, where they gained the retail management and mission-driven business training that helps them to have a shared business vision.
They were introduced to each other by a mutual friend that learnt that they both shared the same concern and vision of what would one day become GoBistro, that you can get healthy, convenient and delicious food but not at the same place.( It’s either healthy and delicious but not convenient or it’s convenient and healthy but not delicious…)
Their vision was to make real food from scratch by using fresh ingredients and making that food convenient, fast, healthy and delicious too.

I recently went to visit their store-front location on Broadway Street and I tried the Roasted Beet Salad & the Korean Marinated Flank Steak. It was really good and I kept commenting on how on earth am I eating steak in a box and how on earth does it taste so good?! Eager, explained to me that they listen to their customers. They constantly change their menu to adapt to what people want and need.
GoBistro also helps the community by delivering fresh food free-of-cost to Urban Peak, a non-profit organization in Denver that provides a full convergence of services for youth ages 15 through 24 experiencing homelessness or at imminent risk of becoming homeless.
